Our tapping scale

  • Buckets tapped: close to 200
  • Trees tapped: about 150

How we collect and finish our syrup

  • Sap collection: hand-collected
  • Boiling: boiled down over a wood fire
  • Finishing: filtered and bottled right away

We aim to keep things as fresh as possible: We aim to collect, boil, and bottle all on the same day.
